I discovered Indian Masala Chai in 2005 on my first trip to India. Since then I drink copious amounts of this tea winter and summer. In winter a hot mug (so much more to drink) is comforting and it makes the cold much more bearable. I am sure many of you found a cup this winter on the Boeremark to be the right thing to drive the cold away. In summer I chill it and it refreshes and revives a tired body, mind and soul instantaneously!

500ml Cold Milk
5-10ml of Taste Café Seven Spice Indian Chai Mix
4 – 6 Tea Bags
Sugar/Honey/Condensed Milk to taste
If you don’t want to use condensed milk, replace it with 80ml cream and add sugar to taste.
- Heat the water in a pot on the stove.
- Add your 5 – 10ml of Taste Café Chai Mix depending on how strong you want the aroma to be.
- Bring to the boil, once it boils, turn heat down to simmer slowly.
- Add your tea bags and simmer for 3 – 5 minutes, add your milk and sweetner of choice.
- From now on the milk and water mixture must not boil. Simmer for a further 3 minutes or until your tea is as strong as you prefer it. You need a fairly strong tea to compete with the aromas of the spices.
- Remove from heat and remove the tea bags as the tannins in the tea will leave a bitter taste if you leave it in the mix.
- If you would like to you can strain the tea through a fine sieve to remove some of the spice or serve as is.
- Enough for 4 mugs or 6 cups, makes about 1 liter.
- Use half Rooibos tea for a different cup of tea.
- For a more luxurious tea, replace half of the milk with some cream.
